Cheeseburger Day Recipe: The Everything Burger

You won't be able to resist celebrating Cheeseburger Day with our Everything Burger!

The Everything Burger

THIS ALL-AMERICAN BURGER IS FILLED WITH COLOURFUL LAYERS OF BACON, AVOCADO, JALAPEÑOS AND COLESLAW.

 

PREP TIME: 30 MINUTES | COOK TIME: 20 MINUTES | SERVES: 4

 

4 bacon rashers

450 g/1 lb fresh beef mince

1 tbsp vegetable oil, for brushing

4 Monterey Jack cheese slices

4 tbsp Dijon mustard

4 brioche buns, split

pickled jalapeños (optional)

2 large tomatoes, sliced

4 Little Gem lettuce leaves

1 avocado, peeled and thinly sliced

salt and pepper (optional)

 

COLESLAW

85 g/3 oz red cabbage, shredded

85 g/3 oz hard white cabbage,

shredded

55 g/2 oz green cabbage,

shredded

2 carrots, about 175 g/6 oz, grated

1 onion, finely sliced

2 red apples, cored and chopped

4 tbsp orange juice

2 celery sticks, finely sliced

4 tbsp low-fat natural yogurt

1 tbsp chopped fresh flat-leaf

1. Put the bacon in a frying pan over a medium heat and cook for about 8 minutes, or until crisp. Drain on kitchen paper and break the rashers in half.

2. Place the beef in a medium-sized bowl with the salt and pepper, if using, and gently mix to combine. Divide into four equal-sized portions and shape each portion into a patty.

3. Place a large frying pan or ridged griddle pan over a medium–high heat. Lightly brush the patties with oil and add them to the pan. Partially cover and cook for about 4

minutes, without moving, until the burgers are brown and release easily from the pan. Turn, place a slice of cheese on top of each burger, partially cover again and cook for a further 3 minutes, or until cooked to your liking.

4. To make the coleslaw, place the cabbage, carrots and onion in a bowl and mix together. Toss the apples in the orange juice and add to the cabbage with any remaining

orange juice and the celery. Mix well. Mix the yogurt and parsley in a bowl then pour over the cabbage mixture and stir.

5. Spread the mustard on both halves of the buns and place a few slices of pickled jalapeños on each bun base, if using, and set a burger on top. Then, layer on top of

each burger: tomato slices, lettuce leaves, bacon, coleslaw and avocado slices. Serve immediately.
